So when can histamine become a problem?
When we accumulate an excess of histamine that then we are not able to eliminate. In these cases, we talk about histamine intolerance, when our body collapses due to an excess of histamine in the body and this excess manifests itself with different symptoms.
When or why can’t we eliminate excess histamine?
We eliminate histamine through two very important enzymes: DAO and HNMT. The two enzymes prevent food histamine from entering the bloodstream and having biological activity within our body. The most common reason is when we have a deficit of DAO (Diamine Oxidase) that is responsible for degrading histamine at the intestinal level.
What role does Catalase have in the process of histamine degradation?
DAO of plant origin naturally contains Catalase. This helps to offer protective effects against unwanted residues from histamine degradation: hydrogen peroxide (H2O2). That is, it can prevent the final accumulation of H2O2 by promoting its correct elimination through the release of oxygen (O2) and water (H2O).
